Egg in a Basket: My New Favorite Breakfast
I first learned about “Eggs in a Basket” while watching “V for Vendetta” one of the best movies ever ( a topic for another post). I remember it looking so yummy and wanting to make it right away. For one reason or another I became very distracted and forgot all about it for a few years. However, in an attempt to add some variety to our menus, I decided to make it one day. My husband had a horrible stomach ache and I remembered that my mom used to make me hard-boiled eggs and toast when my tummy was hurting. Drew’s belly gave my the perfect excuse to try this out.
What You Need
- Bread- (I prefer wheat but we only had white when this photo was taken)
- A Shot glass, small cookie cutter or a champagne glass (which is what I used)
- Butter or something like it.
- 1 egg for every slice of bread used
How You Make It
- Heat non-stick skillet. While pan is warming cut out centers of each bread with cutter (keep the centers and put to the side)
- Place bread in the pan and immediately crack egg into each center
- Let it set (cook) for a few minutes (I like my yolks cooked fully) then flip
- Salt and pepper to taste.

Slow Cooker Rustic Chicken and Dumplings Recipe
I know this is a little late considering I posted the pictures on Wednesday but I am sure that once you taste it you will forgive me.
OH, and for the record, THIS IS NOT A SOUP OR A STEW like most recipes.
Rustic Chicken Recipe
Ingredients:
- 4 large boneless, skinless chicken breast
- 1 large onion (the biggest that you can find)
- 3 cups of water
- 1 tbs of Chicken Bullion Powder (or 1 cube)
- 2 cups of mushrooms
- Palm-full of the following finely chopped:
- Fresh Rosemary
- Fresh Basil
- Fresh Parsley
- Cumin
- Paprika
- Black Pepper
Directions:
Combine all ingredients into the crock pot and cook on high for 4-5 hours or on low for 8.
Dumplings
Ingredients:
- 2 cups of all-purpose flower (sifted)
- 2 teaspoons of baking powder
- 3/4 teaspoons of salt (I normally leave all additional salt out, but it is imp[ortant that you add it to this recipe.)
- 2 tablespoons of melted butter
- 3/4 cup of milk
- fresh herbs such as parsley, tarragon, chives, or dill to taste
Directions for Dumpling Batter:
- Sift together flower, baking powder, and salt in to a medium to large sized bowl.
- Add fresh herbs and mix thoroughly.
- Add melted butter and milk to dry ingredients.
- Mix gently with your fingers and avoid over mixing or dumplings will be tough and dense.
You may add more milk in small quantities to ensure that all flour is absorbed but be careful not to make batter t0o wet.
Cooking the Dumplings
About 20-30 minutes before you eat, drop tablespoons of dumpling batter onto the top of the chicken in slow cooker. they may not be fully immersed in the broth- that’s OK.
