Sunday Dinner at Our House
Andrew and I have always had weird work schedules so we really never had a dinner routine. When Mya was born our work schedules changed a little but we still could not sit down together for dinner. Because I was working during the day (as a teacher) and he was working at night, Andrew would cook dinner for us in the crock pot so that Mya and I had food when we got home. It was helpful and made him feel that we were eating dinner with him.
Now that I am working from home and his hours are still less than normal, we don’t get to eat meals together all the time. It’s something that I actually long for because I want Mya to know what it is like to have family dinners with both parents. I want her to have that tradition and that “family time”.
Sunday have become more important to me that ever before. It’s is our family day and I make sure that Sunday dinners are home cooked meals that we eat at the table (now that I have cleaned off the table). Tonight we had Sloppy Joes, tater tots, and mixed veggies. It was a very American meal.
Kristina’s Sloppy Joes
- 1 lbs of ground turkey
- 1 large onion
- 4 garlic cloves
- 1 medium carrot
- 1 can of tomato sauce (15 oz)
- 1/2 cup of ketchup
- 1 cup of BBQ sauce
- 1/4 cup of Worcestershire Sauce
- oregano, basil, parsley, Adobo Seasoning
Saute onion, garlic, and finely minced carrot in olive oil. Add ground turkey and brown. Add dry seasonings being sure to crush them in your hand before adding to meat. Add tomato sauce and stir well. Next add Worcestershire Sauce , ketchup, and BBQ sauce. Mix well and cover. Simmer for 20 minutes.… Continue reading
